No-bake energy bites

My husband is a big eater. I like to have extra, filling foods around the house for grab and go snacks. Being healthy is important to us and I love finding new recipes that fit the bill. This is one of those. I know that these no-bake bites have been making the rounds on the web but what was so appealing to me is that you can tweak the recipe however you'd like depending on your dietary needs or what you have on hand. I call this an everything but the kitchen sink recipe since I put in whatever I could find that sounded yummy. It turned out great! Here is what I came up with:

Ingredients

  • 1 cup dry old-fashioned oatmeal
  • 1/2 cup oat bran
  • 1/2 cup almond butter
  • 1/2 cup chocolate chips
  • 1/3 cup honey
  • 1/3 cup crushed pecans
  • 1/3 cup sunflower seeds
  • 3 tsp Maca in powder form 

In a medium sized bowl, mix the ingredients and let chill in the refrigerator for about an hour. Then roll into balls and that is it! Store in an air tight container in the fridge for up to a week. I was able to make 18 balls, this will vary depending on the size you decide to make. 

*If the mixture seems a bit dry try adding some more nut butter or honey. If the mixture seems a bit too wet, try adding some more oats. You can also add ingredients such as dried fruit, a little agave for extra sweetness, chia seeds, or peanut butter instead of almond.

*Healthy hint: Have you guys ever heard of Maca? I discovered the root plant after a friend introduced me to it about a year ago. I use it for a boost of energy in the mornings by putting 1/2 tsp in my oatmeal.
