Kale salad

Kale has got to be one of my favorite foods. I put it in everything from pastas to soups to salads. There are so many benefits from eating this "queen of greens". It is high in fiber, iron, vitamin K, vitamin A, vitamin C, and calcium. It also has antioxidants and omega-3 fatty acids. 

This is one of my favorite salads. When I don't have it for a while, I literally crave it! So yummy and easy to make.

Ingredients:

  • 2 bundles of organic kale (washed and cut or torn into bite sized pieces)
  • 1/2 onion chopped up
  • 1 bell pepper chopped up
  • 1 Tbsp Bragg Liquid Aminos
  • 1/4 C extra virgin olive oil
  • 1/3 C sunflower seeds
  • 1 lemon

Put all ingredients in a ziploc bag and shake to mix it all up. Then chill in the fridge for about an hour and serve! Just as good the next day. 

*Healthy hint: You can add all kinds of things to this for extra benefits. I love putting chickpeas (garbanzo beans) in for extra fiber, vitamins, and minerals. Or tofu would be a great addition as well.
