pumpkin oat cookies

I really wanted to make something with pumpkin for my first recipe in October but I also felt lazy and didn't want to leave the house to get ingredients! So, I threw together some healthy cookies with ingredients I already had in my cupboard (and hopefully ones you will have on hand as well). These are a nice sweet treat. They are gluten free and vegan so you don't have to feel very guilty eating them all :) 

Ingredients: 

  • 1 cup pumpkin puree*
  • 1 ripe banana
  • 2 tablespoons maple syrup (if you are not vegan, honey would work well here too) 
  • 1 1/4 cups rolled oats
  • 3 tablespoons almond slices
  • 4 tablespoons flax seed
  • 2 teaspoons pumpkin pie spice (this would be best but I didn't have it so I combined 1 1/2 teaspoons cinnamon with 1/2 teaspoon nutmeg)
  • 1/4 teaspoon salt

* I only had 1/2 cup of pumpkin puree on hand so I substituted the rest with applesauce. This turned out great as well. 

Also, all kinds of things could be added into these. Chocolate chips, raisins, or other kinds of nuts would be wonderful additions. 

Instructions: 

Combine the pumpkin, banana, syrup, spice, and salt with a hand mixer. Add in the almonds, flax, and oats. Create 10 cookies on a lined baking sheet. Cook for about 15 minutes at 350°. The cookies will never fully harden but they will stay together nicely.
