blueberry almond butter oatmeal

I am surprised I haven't posted about my morning oatmeal yet. This is something I have practically every day. I get sick of it once in a while and try to change it up a little by adding different things into the oats. This combination I am talking about today is one of my favorites. Oatmeal is a great way to start the morning. It is high in fiber and protein and low in fat. It contains lignans, antioxidants, and lowers cholesterol levels. ​I love adding almond butter (or other nut butters) into my oatmeal. It adds protein and keeps me full for longer. 

Ingredients:​

  • 1/2 cup oatmeal
  • 1 tablespoon almond butter
  • 2 tablespoons flax meal
  • 1 tablespoon chia seeds
  • ​1/4 cup blueberries
  • 1 tablespoon agave (optional for sweetness)

Instructions:​

On the stovetop combine oatmeal, flax, and 1 cup water. Bring to a boil, then lower the temp and wait about 5 minutes or until oats and flax have absorbed the water. Add chia seeds, almond butter, and agave. Stir. Then add some of the blueberries into the oats. Put the rest of the berries on top. I put a little powdered sugar over the berries but it's not necessary. Enjoy!

*healthy hints: I love putting the flax in there because not only is it healthy but it makes the oatmeal fluffy and light. Two egg whites would be great as well. That would make the oats lighter as well and give some extra protein. ​

*You can microwave this as well. Microwave all but the berries.​
