carrot and sweet potato "fries"

I have been on a 3 day juice cleanse that started monday. I have never done a cleanse and thought I would give it a try. I found the juice recipes on Dr. Oz. The cleanse has you drink 5 different juices during the day and then eat a meal of only fruits and veggies for dinner. Next week I will be sharing the the recipes and my experience on the cleanse (since it is not completely over yet), but today I am talking about the vegetable meal I had for dinner last night. It was so easy and really yummy. On any other occasion this would be a great side dish or snack. I got this recipe as well from Dr. Oz.

{this serves two} 

Ingredients: 

  • 2 large sweet potatoes
  • 2 large carrots
  • 2 tablespoons olive oil
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon pepper
  • optional: 1/2 onion*
  • optional: 1 teaspoon ground cumin
  • optional: 1 teaspoon cayenne pepper (we didn't have cumin and used this instead. So good with the spice!) 
  • optional: 4 garlic cloves (we made a second batch and used garlic. This was delish as well.) 

Instructions: 

Peel the sweet potatoes and carrots. You can cook the skin as well, we did and it was delish. Cut the carrots lengthwise, then in half. Cut the sweet potatoes in half and then lengthwise in half. From there cut them to resemble the shape of fries. Now, either combine all ingredients in a large bowl and mix or in a ziploc bag and shake. Spread the carrots and potatoes thinly on a cooking sheet and bake at 425° for about 30 minutes.

*We cooked onions with this the second time around. They turned out great! Just chop them up and mix them with the rest of the ingredients.
