I have to agree with this sentiment. We ran out of Kodiak Cake mix this morning so I had to improvise. This is gluten free and full of protein, fiber, and yummyness!

This serves 2. 

Ingredients: 

  • 1 ripe banana
  • 2 cups ground gluten free oats (here is a link to what I buy, this company is the best!) 
  • 4 egg whites
  • 2 tablespoons chia seeds
  • 1 tablespoon ground flax
  • 1 cup water
  • 1/2 teaspoon vanilla

Instructions: 

Using a Vitamix or food processor blend ingredients, then put into waffle maker. You could turn this into pancakes as well!
