strawberry purée

I decided to switch up the usual jelly or maple syrup on my pancakes this weekend. I had frozen strawberries in the freezer and thought I would try to make a purée out of them. It turned out wonderful and was a refreshing twist to the usual standby toppings. 


  • about 10 organic strawberries, thawed or fresh
  • the juice from one lemon
  • 5 tablespoons coconut sugar
  • 1/4 cup water


  • Blend all ingredients. I did this in my new Magic Bullet (which I'm obsessed with by the way!), but a Vitamix would work well or even a food processor/blender.
  • Drizzle on pancakes, french toast, or even on strawberry shortcake.
