I decided to switch up the usual jelly or maple syrup on my pancakes this weekend. I had frozen strawberries in the freezer and thought I would try to make a purée out of them. It turned out wonderful and was a refreshing twist to the usual standby toppings.
- about 10 organic strawberries, thawed or fresh
- the juice from one lemon
- 5 tablespoons coconut sugar
- 1/4 cup water
- Blend all ingredients. I did this in my new Magic Bullet (which I'm obsessed with by the way!), but a Vitamix would work well or even a food processor/blender.
- Drizzle on pancakes, french toast, or even on strawberry shortcake.
