gluten free banana almond butter muffins

These muffins are hearty, healthy, and grain-free! They are full of protein and will leave you full for hours to come.  

Makes 12 muffins


  • 1 cup almond butter (or nut butter of your choice)
  • 2 ripe, mashed bananas
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 3 whole eggs
  • 1/2 teaspoon salt
  • 1/4 cup maple syrup (or honey)
  • 1 teaspoon cinnamon
  • 1/4 cup chia seeds


  • Preheat oven to 350º 
  • Line a standard muffin tin with paper liners or lightly grease
  • Combine all ingredients
  • Divide batter evenly between muffin tins
  • Bake for around 15 minutes or until a toothpick inserted into the center comes out clean
  • Let cool for a few minutes before removing from the pan
