simple cinnamon vanilla granola

I love me some granola! It's good in milk, on it's own, atop greek yogurt with sliced fruit and a drizzle of honey, sprinkled on top of an acai bowl. This recipe is really just a base for all granola making. I like to open my cupboards and see what else I can add like sunflower seeds, nuts, dried fruit. In the picture below I added buckwheat groats (don't recommend though as they are too crunchy for me) and sunflower seeds. Sometimes I'll add chopped apricots, dried cranberries and/or coconut flakes after the granola has baked. This also makes your house smell amazing when it's baking, and I thought it was the perfect recipe for the rainy weather we've been having. 

Ingredients:

  • 3 cups oats
  • 1/2 cup chopped almonds
  • 1/2 cup chopped walnuts
  • 1/4 cup chia seeds
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 1/4 cup melted coconut oil
  • 1/3 cup maple syrup
  • (this is where you can add anything else you'd like nut/seed wise like sunflower seeds)
  • You can also add any shredded coconut or dried fruit after granola has baked

 

Instructions:

  • Preheat oven to 325F
  • Mix together dry ingredients (nuts/seeds, oats, chia seeds, cinnamon, salt)
  • Add wet ingredients (maple syrup, vanilla extract and melted coconut oil)
  • spread mixture onto a baking sheet lined with parchment paper 
  • Bake in oven 15-25 min until golden brown stirring halfway through
  • Remove from oven when golden brown (timing really depends on what you add to the mixture)
  • Let sit and cool. Granola will harden upon cooling
  • Add any dried fruit (e.g. sliced apricots, coconut flakes, etc)
