Acai Bowls

For some reason I’ve been craving lots of fruit during my pregnancy. This includes acai bowls. At first Matt was picking me up acai bowls from a local cafe but then we realized we could just make them at home and pile on all of the fresh seasonal fruit we have right now. These bowls are perfect for the hot weather that accompanies summertime, as they’re such a refreshing meal. I love to top my acai bowls with fruit and granola but you could also add chia seeds, hemp seeds, any type of nut or cashew butter. I hope you love this recipe as much as we do.

Makes 2 servings

Ingredients

1/2 cup frozen mango

1 packet of frozen acai (we use these found at our local grocery store)

1 frozen banana

1/4 cup frozen blueberries

1/4-1/2 cup of oat milk (or any milk of your choice depending on consistency)

granola (check out my recipe here)

fresh or frozen fruit


Directions

Using a high speed blender (we prefer the Vitamix), blend together the mango, acai, banana, blueberries, and oat milk. Pour into bowls and top with granola and fruit of your choosing. We use sliced strawberries, sliced bananas, blueberries and granola atop our bowls. You could also think about adding hemp seeds, chia seeds, pepitas, bee pollen, cacao nibs, cashew butter, or any type of nuts. Sometimes I add a drizzle of honey. Enjoy!
