The perfect 4-ingredient chia pudding

Matt and I just got back from another trip to Tulum, where the food scene is nothing less than inspiring. We were reminded how much we love chia pudding and what a wonderful treat it can be. The best part, is that chia pudding is a super clean, healthy treat. Our recipe is completely plant-based and so easy to make. I hope you enjoy this recipe as much as we do!



Ingredients

1 can coconut milk

1/3 C chia seeds

2tbs maple syrup

1 tsp vanilla extract

Directions

Really simply mix all of the ingredients together in a bowl, cover and place in the refrigerator. Let everything sit for at least 2 hours (preferably overnight but we can never wait) so the chia seeds can gel. Then, serve as you’d like. We top ours off with berries and granola or toasted coconut. It’s also fun to layer the pudding in a cup parfait style with your fruit and granola.
