The easiest granola recipe you must try

We have gone through a few batches of granola here since the pandemic started. The recipe I use is too easy not to just keep repeating. We use the granola with yogurt and fruit, pour milk over it with some sliced bananas for a little snack, or use it on all the acai bowls I’ve been craving. This recipe only calls for a few ingredients, none of which are too exotic, so you should have most if not all of the ingredients on hand already. Plus, it smells AMAZING when baking in the oven.

Ingredients

3 cups old fashioned rolled oats

1/3 cup nuts (I use a combo of almonds, walnuts, and hazelnuts)

1/4 tsp salt

Generous shakes of cinnamon

1/4 cup coconut oil in liquid form

1/4 cup maple syrup

1 tsp vanilla extract


Directions

Preheat oven to 350 F. Mix together oats, nuts, salt, and cinnamon and set aside. In a separate bowl mix the wet ingredients including coconut oil, maple syrup, and vanilla extract. Combine all ingredients together, spread onto a baking sheet lined with silicone mat or parchment paper, and bake in the oven for 20-25 minutes. After you remove the granola, let it sit and cool on the baking sheet for at least 30 minutes before moving or stirring. When granola has cooled, you can place into an airtight container and enjoy for 1 week (if it lasts that long).

It’s seriously that easy! Now you know why I’ve been making this granola so often. The best thing is that this granola is also vegan, and gluten free. It’s great to have on hand, and I hope you enjoy the recipe as much as we do in our house.
